By now you've got one of our new Chicken Steamers, and if you don't - what are you waiting for?! They're too cluckin' cute to NOT have in your kitchen, so get on that! (They also look adorable with the divided chicken plate, which suctions to the table like no other plate. Check out the video.)

But we're here to talk about the Steamer, which again, if you don't have, you need.

We hear you, though: what do I do with it? There's two little cups, and my recipes are for 24 cupcakes. No one has time for 12 separate bake times. So here's some stuff you can do!

1: Chocolate Chip Muffins. (Healthy!...ish.) (ORIGINAL RECIPE HERE!)

Ingredients

Steamer

  • 9  tbsp. white whole wheat flour (or all-purpose flour)
  • 3/4 tsp. baking powder
  • dash of salt
  • 4 1/2  tbsp. semi-sweet chocolate chips (or milk chocolate) (We like the mini ones. They're so cute.)
  • 1 1/2 tsp. vanilla extract
  • 3 tbsp. butter or coconut oil, melted (I used Land O' Lakes light butter)
  • 3 tbsp. + 1 tsp. milk (almond milk, soy milk, or cow's milk will work)
  • 3 tbsp. granulated sugar

Directions:

  • Preheat your oven to 350, spray the two cups of the steamer with non-stick spray of your choice.
  • Combine all your dry stuff in a medium bowl.
  • Slowly add in the wet stuff.
  • Split up into two cups and bake for 17-20 minutes. Use the toothpick test to make sure they're ready. (Don't know what the toothpick test is? Check out this excellent reference: How to Use the Toothpick Test to See if Baked Goods Are Done.)

Steamers

2: Chocolate cupcakes. (ORIGINAL RECIPE HERE!)

Ingredients:

  • 3 Tablespoons all-purpose flour
  • 2 Tablespoons granulated sugar
  • 1 Tablespoon unsweetened cocoa powder
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 3 Tablespoons milk
  • 1 Tablespoon vegetable or canola oil
  • 1/2 teaspoon pure vanilla extract

Directions:

  • Preheat your oven to 350, spray the two cups of the steamer with non-stick spray of your choice.
  • Combine all your dry stuff in a medium bowl.
  • Slowly add in the wet stuff. (No eggs required - convenient, no?!)
  • Divide batter evenly between the two cups.
  • Bake for 20-22 minutes. Use the toothpick test to make sure they're ready.

3. Bonus: Frozen Yogurt Pop Treats! (ORIGINAL RECIPE HERE!)

Ingredients:

  • 1 cup – yogurt, plain
  • 1 medium – banana
  • 1 cup – mixed berries, frozen
  • 1/8 cup – honey

Directions:

  • Put it all in a blender.
  • Put it in the cups.
  • Freeze it!

Well that's it for us today. We're not sure if spring or summer will EVER come here in the Midwest, but we hope you guys get some warm weather to test out these frozen yogurt treats! (We're okay with cupcakes and muffins until then!)
